Couscous Salad - cooking recipe

Ingredients
    200 g couscous
    1 1/2 tbsp runny honey
    1/2 tsp ground cumin
    2 None lemons, juice and grated zest
    6 tbsp olive oil
    1 None red, 1 yellow and 1 green pepper, deseeded and diced
    5 None spring onions, sliced
    15 g fresh flat-leaf parsley, finely chopped
    200 g feta, crumbled
Preparation
    Place the couscous in a bowl, add 3/4 cup boiling water and a pinch of salt and allow to stand for 5 mins. In a separate bowl, make the dressing by mixing the honey, cumin and lemon juice and zest. Gradually whisk in the oil. Season to taste.
    Fluff up the couscous with a fork, then mix in the peppers, scallions, parsley and dressing. Gently fold in the feta.
