Sesame Twists With Green Olive Dip - cooking recipe

3 sheets frozen puff pastry, thawed
2 tbsp sesame oil + extra, to drizzle
2 tbsp Parmesan cheese, grated
1 tbsp sesame seeds
1 tbsp poppy seeds
13 oz ricotta cheese
8.75 oz green olives, pitted
5.25 oz feta cheese, crumbled
2 cloves garlic, minced
1 None spring onion, finely chopped
1 None red chili, finely chopped
2 tsp lemon zest
Preparation

Preheat oven to 400\u00b0F. Line 2 baking trays with parchment paper. Brush puff pastry with sesame oil. Combine Parmesan, sesame seeds and poppy seeds. Sprinkle over top. Cut into 3/4 inch strips then shape into twists. Transfer to prepared trays and bake for 15 mins, or until golden.
Meanwhile, process ricotta, olives, feta and garlic until smooth. Transfer to a serving bowl. Sprinkle with spring onion, chili and lemon zest. Drizzle with sesame oil. Serve with twists.
