Potato And Ham Omelette - cooking recipe

Ingredients
    1 tbsp butter
    1 tbsp olive oil
    1 None potato, peeled, chopped
    6 None large eggs
    1 None small red pepper, seeded, finely chopped
    3.5 oz shaved ham, chopped
    2.5 oz grated Cheddar cheese
    2 None green onions, thinly sliced
Preparation
    Melt butter and oil in an 8 inch frying pan over medium heat. Cook potatoes for 8-10 mins, until golden and tender. Drain on paper towels.
    Whisk eggs together and season to taste. Pour into pan. Cook over medium heat for 4-5 mins, until omelette begins to set. Sprinkle with potatoes and remaining ingredients. Cover and cook for another 5 mins over low heat until cheese has melted and omelette is set.
