2 1/2 cups flour
1/2 tsp salt
1 cup (2 sticks) unsalted butter, at room temperature
1/4 cup powdered sugar, plus additional, to dust
1 cup blanched almonds, toasted and finely chopped
Preparation

Preheat the oven to 400\u00b0F. Line 2 baking pans with parchment paper.
Sift flour and salt into a medium bowl. Beat butter and sugar in a large bowl with an electric mixer until pale and creamy. Beat in the flour and almonds until the dough comes together in a ball.
Form 1/2 tbsp of the dough into balls. Place on the prepared pans.
Bake for 10 mins. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Dust cookies with additional powdered sugar.
