Lamb Rogan Josh - cooking recipe

Ingredients
    1/2 cup rogan josh curry paste
    1 lb cubed lamb
    1 tbsp vegetable oil
    1 tbsp ghee or butter
    1 medium onion, finely chopped
    2 None bay leaves
    4 None cardamom pods, bruised
    1 None cinnamon stick, halved
    1 tsp ground turmeric
    1/2 cup plain Greek yogurt
    2 tbsp chopped mint
    None None Cooked basmati rice and pappadums, to serve
Preparation
    Mix the curry paste and lamb in a medium bowl. Cover with plastic wrap. Refrigerate at least 3 hours.
    Heat the oil and ghee in a large saucepan on medium heat. Add the onion and cook for 5 mins, stirring occasionally. Add the bay leaves and spices and cook, stirring for 1 min. Increase the heat to high and add the lamb. Cook, while stirring for 3 mins. Reduce the heat to low; cover and cook, stirring occasionally, for 15 mins.
    Stir in 1/2 cup water. Cook, covered, for 1 hour. Remove from the heat and stir in the yogurt and mint. Season to taste and serve with rice and pappadums.
