Couscous, Salami And Vegetable Salad - cooking recipe
Ingredients

1 1/2 cups couscous
1 jar (10 oz) roasted vegetables or roasted peppers, drained
7 oz shaved salami, torn
4 oz stuffed green olives, sliced crosswise
4 oz feta cheese, cubed
1/2 cup flat-leaf parsley leaves
1/3 cup basil leaves, torn
1/3 cup store-bought Italian dressing
Preparation

Place the couscous in a heatproof bowl. Stir in 1 1/2 cups boiling water. Cover with plastic wrap; let stand for 5 mins or until the liquid is absorbed. Using a fork, fluff and separate the grains.
Add the vegetables, salami, olives, feta, parsley, basil and dressing and toss gently to combine. Serve.
