Beet And Goat Cheese Log With Honey - cooking recipe

Ingredients
    1 None medium beet, sliced 1mm thick on a mandoline
    12 oz goat cheese, at room temperature
    2 tbsp fresh lemon thyme leaves, plus extra leaves to garnish
    2 tbsp honey
Preparation
    Line a clean damp work surface with plastic wrap. Arrange beet slices on top in a small rectangle, overlapping slightly. Spread goat cheese over top then sprinkle with lemon thyme. Season. Use plastic wrap to help roll up into a log. Discard plastic wrap and transfer to a serving platter. Drizzle with honey and sprinkle with extra thyme.
