Baked Chicken Macaroni & Cheese - cooking recipe

Ingredients
    2 tbsp butter
    1/4 cup all-purpose flour
    1/2 cup milk
    1.5 oz cheddar, grated
    1.5 oz Parmesan, grates
    7 oz macaroni, cooked, kept hot
    1/2 None small rotisserie chicken, skin removed, meat shredded
    4.5 oz canned corn, drained
    1/2 None small red pepper, seeds removed, chopped
    1/4 cup frozen peas, thawed
Preparation
    Preheat broiler to high.
    Melt butter in a large saucepan over low heat. Stir in flour and cook for 1 min. Remove from heat and whisk in milk until smooth. Return to heat and cook, stirring, over high heat until sauce boils and thickens. Reduce heat and simmer for 3 mins. Stir in half of both cheeses until melted and combined. Remove from heat and stir in macaroni, chicken, corn, red pepper and peas and season to taste.
    Pour into a large casserole dish (or 4 small ramekins). Sprinkle with remaining cheese. Place under broiler for 4-5 mins or until cheese is golden and melted.
