Coffee And Almond Bars - cooking recipe

1/2 cup butter, softened
1/2 cup granulated sugar
1 tsp vanilla extract
1 None egg
1 cup self-rising flour, sifted
1 cup raisins
None None Icing
1 cup powdered sugar, sifted
1 tsp butter
1 tbsp strong black coffee granules, dissolved in 1 tbsp hot water
2 tbsp sliced almonds, toasted
Preparation

Preheat oven to 350\u00b0F. Grease and line a 12x8 inch baking pan.
Cream butter, sugar and vanilla extract until pale and creamy. Add egg and beat until combined. Fold in flour and raisins. Transfer to prepared pan and bake for 25 mins, until golden. Let cool for 5 min in pan then transfer to a wire rack to cool completely.
Meanwhile, to make the icing, mix together powdered sugar and butter in a small bowl. Add coffee, a little at a time, stir until smooth. Spread icing over cooled cake and sprinkle with almonds. Cut into bars and serve.
