Veggie Nachos - cooking recipe

Ingredients
    1 tbsp olive oil
    1 cup finely chopped mushrooms
    1 (7 oz) can cooked corn kernels, drained
    1 (15 oz) can vegetarian refried beans
    1 (9 oz) bag baked tortilla chips
    1 cup shredded Mexican cheese
    1 (10 oz) jar salsa
    1 (7 oz) tub guacamole
    None None cilantro leaves, chopped scallion and lime wedges, to serve
Preparation
    In a large skillet, heat oil over medium heat. Cook mushrooms and corn for 5 mins, or until mushrooms are soft. Stir in refried beans and cook for 1 min.
    Preheat oven to 350\u00b0F. Arrange tortilla chips on a heatproof platter and sprinkle with shredded cheese. Bake for 3 mins, or until cheese melts. Let cool for 5 mins. Layer refried bean mixture, salsa and guacamole over chips.
    Garnish with chopped fresh cilantro leaves and scallion. Serve with lime wedges.
