Thai-Style Fish With Coconut Sauce - cooking recipe

Ingredients
    1/4 cup soy sauce
    1 tbsp chopped cilantro, plus additional, to serve
    1 piece (1 inch) ginger, grated
    1 None long red chili pepper, finely chopped, plus additional, to serve
    1 clove garlic, crushed
    4 None white fish fillets (6 oz each)
    1/4 cup coconut milk
    2 tsp brown sugar
    1 tbsp lime juice
Preparation
    Preheat the oven to 325\u00b0F. For marinade, combine soy sauce, cilantro, ginger, chili pepper and garlic in a small bowl.
    Place each piece of fish on a 12-inch square piece of parchment paper. Spoon a little marinade over fish, reserving 1 tbsp.
    Gather corners of paper together and tie with string to make loose packets. Place on a baking pan.
    Bake 12-15 mins, until fish flakes easily with a fork.
    Combine coconut milk, sugar and reserved marinade in a small saucepan on low heat. Stir until sugar dissolves. Simmer for 2 mins. Stir in lime juice.
    Sprinkle fish with additional chili pepper and cilantro. Serve with sauce.
