Crunchy Chocolate Log - cooking recipe

Ingredients
    9 oz digestive cookies, roughly broken
    3.5 oz red candied cherries
    1/2 cup butter, chopped
    3/4 cup brown sugar
    2 tbsp cocoa powder
    1 None large egg, beaten
    1 tsp vanilla extract
    1 cup desiccated coconut
Preparation
    Combine cookies and cherries in a large bowl. Set aside.
    Heat butter in a small saucepan over low heat for 1-2 mins, until melted. Add sugar and cocoa powder, stirring until sugar has dissolved. Beat in egg and vanilla. Mix into cookie mixture until combined.
    Sprinkle coconut over 2 - 12 inch pieces of foil. Pile 1/2 the cookie mixture onto each piece of foil and form into logs. Roll up, pressing firmly to coat in coconut. Seal and chill for 3 hours, or until firm.
