Kedgeree Rice Pilaf With Egg And Fish - cooking recipe
Ingredients

2 tbsp oil
1 None medium onion, sliced
2 tbsp raisins
1 tsp curry powder
2 None hard-boiled eggs, 1 chopped, 1 quartered
10.5 oz cooked long grain rice
8.75 oz smoked mackerel, hoki or trout, skin removed, flaked
2 tbsp heavy cream
1/3 cup fresh cilantro or parsley, chopped
2 1/2 tbsp butter
None None lemon wedges, to serve
Preparation

Heat oil in a large frying pan over medium heat. Cook onion, stirring, for 5 mins, until soft and golden. Add raisins and curry powder and cook for 1 min. Add chopped egg, rice, flaked fish and heavy cream. Toss to combine. Season and continue to cook until heated through.
Transfer to serving bowls. Garnish with fresh herbs and butter. Serve with quartered egg and lemon wedges.
