Orange Macaroon Cake - cooking recipe

1/2 cup butter, softened
2 tsp orange zest
3/4 cup granulated sugar, plus 2 tbsp
2 None eggs, separated
2 1/4 cups self-rising flour
3/4 cup milk
1/2 tsp vanilla extract
1/2 cup desiccated coconut
Preparation

Preheat oven to 350\u00b0F. Grease and line an 8x12 inch cake pan with parchment paper.
Beat butter, orange zest, 3/4 cup sugar and egg yolks until light and fluffy. Stir in flour and milk in 2 batches. Transfer to prepared pan.
To make the macaroon topping, whip egg whites to soft peaks. Gradually add remaining sugar, beating until dissolved. Stir in vanilla and coconut. Spread over cake batter and bake for 30 mins. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
