Turkey Burgers With Roasted Tomatoes And Rosemary - cooking recipe

Ingredients
    2 lb small sweet potatoes, peeled, cut into wedges
    1 tbsp fresh rosemary leaves
    2 tbsp olive oil
    4 None plum tomatoes, halved
    1 tbsp olive oil, plus extra for drizzling
    None None Turkey Burgers
    1 lb ground turkey
    1 None large egg
    2 tbsp breadcrumbs
    1 clove garlic, minced
    1/2 cup mayonnaise
    1/4 tsp cayenne
    4 None bread rolls
    2 oz baby arugula
Preparation
    Preheat oven to 425\u00b0F. Place potatoes and rosemary on baking tray and drizzle with oil. Bake for 35 mins, or until tender and golden brown, turning once.
    Arrange tomatoes, cut-side up, on a separate lined baking tray. Drizzle with a little oil and season. Cook on a lower rack of oven while wedges are cooking. Allow to cool slightly before assembling burgers.
    Meanwhile, in a medium-sized bowl, combine ground turkey, egg, breadcrumbs, garlic. Season. Shape into 4 patties.
    Heat oil in a large frying pan over high heat. Cook burgers for about 4 mins per side, or until cooked to your liking.
    Meanwhile, in a small bowl, combine mayonnaise and cayenne. Cut rolls in 1/2 and spread a little cayenne mayonnaise on each. Top bottom half with arugula, burgers, tomatoes and remaining bread.
    Serve burgers with sweet potato wedges sprinkled with sea salt.
