Ingredients

1 1/4 cups all-purpose flour
1 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp apple- or pumpkin-pie spice
5 tbsp unsalted butter, cubed
3 tbsp honey
Preparation

Preheat oven to 350\u00b0C. Line two baking sheets with parchment.
Sift flour and spices in a bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Add honey and mix gently to form a soft dough. Cover with plastic wrap and chill for 30 minutes.
Roll dough between two sheets of parchment until 1/8-1/4-inch thick. Cut out shapes of choice. Place cookies slightly apart on prepared baking sheets. Chill for 10 minutes.
Bake for 10 minutes, until golden. Cool for 5 minutes on baking sheet. Transfer to a wire rack to cool
