Roasted Autumn Vegetables - cooking recipe

Ingredients
    6 None potatoes, peeled, cut into quarters
    1 None acorn squash, cut into thick wedges
    3 None red onions, peeled, cut into wedges
    6 None parsnips, peeled, halved lengthwise
    1 bunch baby beets, trimmed, washed
    None None olive oil
    None None salt or fresh herbs to serve
Preparation
    Preheat the oven to 350\u00b0F. Clean each vegetable and dry with a paper towel.
    Heat oil in a baking dish in the oven for 5 mins. Carefully add vegetables, basting with oil.
    Bake for 40-45 mins, turning once. Drain on a paper towel. Serve hot. Sprinkle with salt or fresh herbs to serve.
