Spicy Tomato Dahl - cooking recipe

Ingredients
    1 tbsp olive oil
    2 None medium onions, peeled, chopped
    1 tbsp garam masala
    8 oz red lentils
    4 cups vegetable stock
    12 oz tomatoes, roughly chopped
    None None fresh cilantro leaves. to garnish
    None None warm naan bread, to serve
Preparation
    Heat olive oil in a large wok or frying pan. Saute onions over medium-high heat, stirring occasionally, for 7-8 mins, until softened and starting to brown. Add garam masala and cook until fragrant. Add lentils and stir to coat in spices. Add 2 cups stock and bring to a boil, stirring. Reduce heat, cover and simmer for 8 mins. Add remaining stock and tomatoes. Cook, covered, for 15 mins. Uncover and cook for another 5 mins, until lentils are soft and liquid has reduced slightly.
    Garnish with fresh cilantro and serve with warm naan bread.
