Banana And Walnut Bread - cooking recipe

Ingredients
    2 None bananas, pureed
    1/4 cup skim milk
    1 1/3 cups margarine
    2/3 cups brown sugar
    1 tsp vanilla extract
    4 medium eggs
    3 oz course ground oatmeal flour
    12 oz rye flour
    3 oz walnuts
    5 tsp baking powder
    1 oz dried banana chips
    1 tsp powdered sugar, to serve
Preparation
    Preheat oven to 350\u00b0F. In a large bowl, whisk together the pureed banana, milk, margarine, sugar, vanilla extract and a pinch of salt. Stir in the eggs one at a time then mix in the oatmeal, rye flour, 2 oz walnuts and baking powder. Transfer to a well greased 9 x 4 inch loaf pan and bake for about 1 hour.
    While this is baking, crumble the dried banana chips and coarsely chop 1 oz of walnuts. Mix together and after 15 minutes of baking, distribute onto the top of the cake. Cover with aluminum foil for the final 15 minutes of baking then remove from the oven and allow to cool. To serve, sprinkle with powdered sugar.
