Classic Tomato Chutney - cooking recipe

Ingredients
    3 1/3 lbs ripe tomatoes, peeled and chopped
    1/2 cup white wine vinegar
    1/2 cup raisins
    1 large onion, chopped
    1 clove garlic, chopped
    1 tbsp salt
    4 None whole cloves
    1/2 tsp cayenne pepper
    1/3 cup granulated sugar
Preparation
    Mix all ingredients, except sugar, in a large saucepan. Cook on medium-high heat, stirring, until mixture comes to a boil. Reduce heat to low and simmer for 11/2 hours, stirring occasionally, until tomatoes softens.
    Add sugar; stir until dissolved. Bring to a boil. Cook for 20-25 mins, stirring frequently, until mixture thickens.
    Pour chutney into hot sterilized jars; seal immediately. Store in a cool, dry place for up to 3 months. Keep in the refrigerator after opening.
