Labskaus - A Traditional Northern German Dish - cooking recipe
Ingredients

1 2/3 lb potatoes, peeled and chopped
3 tbsp butter or margarine
2 None onions, peeled and finely diced
1 1/2 lb corned beef, coarsely diced
1 - 13.5 oz jar pickled beet, drained, 6-8 tbsp brine reserved
4 None eggs
1 - 7 oz jar sliced pickles, drained
2-4 None pickled herring, halved
1/2 bunch fresh chives, chopped
Preparation

Cook potatoes in boiling salted water for about 20 mins. Drain and set aside.
Heat 2 tbsp butter and saute onions. Add corned beef and saute for about 2 mins. Add potatoes, beet brine and 4 tbsp water and mash. Heat 1 tbsp butter in a large pan and fry 4 eggs. Serve corned beef hash with fried eggs, beets, pickles, pickled herring and sprinkle with chives.
