Thai Beef And Corn Salad - cooking recipe

Ingredients
    1 tbsp vegetable or sesame oil
    1 cup frozen corn kernels, thawed
    1 lb beef sirloin steak, trimmed
    1 small cucumber, thinly sliced
    1 small red pepper, cut into thin strips
    1 cup bean sprouts, rinsed
    1 None fresh long red chili pepper, thinly sliced
    1/4 cup cilantro leaves
    1 small red onion, thinly sliced
    2 cups mixed lettuce leaves
    1/4 cup lemon or lime juice
    2 tsp fish sauce
    1 clove garlic, crushed
    None None Lime or lemon wedges, to serve
Preparation
    Heat half the oil in a large skillet on medium heat. Add corn, cook for 2-3 mins or until golden. Transfer to a large bowl.
    Add beef. Cook tor 3 mins each side for medium, or until cooked to desired doneness. Let stand, loosely covered with foil, 5 mins. Slice thinly.
    Add beef, cucumber, pepper, sprouts, chili pepper, cilantro, onion and lettuce to corn in bowl.
    Whisk juice, remaining oil, fish sauce and garlic in a small bowl. Add to salad; toss to combine. Serve at once with lime wedges.
