Chocolate Mint Dominoes - cooking recipe

Ingredients
    9 1/2 oz (about 3 cups) desiccated coconut
    4 2/3 cups powdered sugar, sifted
    14 oz can sweetened condensed milk
    2 tsp peppermint extract
    2-3 drops green food coloring
    5 1/4 oz dark chocolate, chopped
    None None Green gel icing pen
Preparation
    Grease and line a 11 x 7-inch deep-sided baking tray with parchment, extending the paper on the long sides for handles.
    Combine the coconut, powdered sugar, condensed milk and peppermint extract in a large bowl. Tint with a few drops of green food colouring.
    Press the mixture evenly into the prepared tray and smooth the surface with a flat knife. Cover with plastic wrap and chill for 30 mins, or until set. Lift from the tray using the handles and cut into 24 rectangles.
    Place the chocolate in a small heatproof bowl over a small saucepan of simmering water (do not let the water touch the base of bowl). Stir with a metal spoon until melted, then transfer into a small cup.
    Line a sheet tray with parchment. Dip the bars half way into the chocolate, allowing the excess chocolate to drip off. Place them on the prepared tray and leave the chocolate to set.
    Using icing gel, pipe dots onto the slices, to create the numbers on the dominoes. Allow to set, then serve.
