Goat Cheese And Salsify Tart - cooking recipe

Ingredients
    2 tbsp all-purpose flour
    1/2 cup white wine vinegar
    2 3/4 lb salsify, washed, peeled, ends cut off
    1/2 lb frozen puff pastry, defrosted and removed from fridge 10 mins before using
    2 tbsp breadcrumbs
    1/2 cup heavy cream
    2 None eggs + 1 egg yolk
    2 sprigs fresh rosemary, leaves stripped from stems and finely chopped, plus extra, for garnish
    1/4 lb goat cheese, crumbled
    2-3 tbsp honey
Preparation
    Preheat the oven to 400\u00b0F. Line an 8 x 12 inch baking tray with parchment paper so that the paper hangs over the edges. Place the flour, vinegar and 12 cups water in a large pot or bowl. Add the salsify. Bring a separate pot of salted water to a boil. Transfer the salsify from the vinegar water with a slotted spoon and place in the boiling water. Cook for 10-12 mins, until tender. Drain.
    Meanwhile, unroll the puff pastry and place on the parchment paper, gently pressing the dough into the edges. Sprinkle with breadcrumbs. Arrange the salsify across the width of the tray, cutting it to fit if necessary. Beat the cream and whole eggs together, season then add the rosemary. Pour over the salsify. Beat the egg yolk and 1 tbsp water together to make an egg wash then brush over the crust. Bake for 30 mins.
    Remove from the oven, sprinkle with cheese, drizzle with honey and garnish with rosemary.
