Lemongrass Chicken - cooking recipe

Ingredients
    1 tbsp vegetable oil
    1 lb chicken thighs, sliced
    3 stalks lemongrass, white stem only, finely sliced
    2 None long red chili, finely sliced
    2 cloves garlic, minced
    1 lb broccolini, halved
    2 tbsp fish sauce
    1 tbsp granulated sugar
    1 tsp cracked black pepper
    2 None spring onions, cut into 1 inch pieces
    None None steamed rice, to serve
Preparation
    Heat oil in a wok or large frying pan over high heat. Stir-fry chicken for 3-4 mins, until browned. Reduce heat to medium. Add lemongrass, chili and garlic and stir-fry for 1 min, until fragrant. Add broccolini, 1/4 cup water, fish sauce, sugar and pepper. Increase heat to high. Stir-fry for 2-3 mins, until broccolini is bright green and just tender. Add spring onions.
    Serve with steamed rice.
