Pork Skewers With Winter Salad - cooking recipe

Ingredients
    4 tbsp cider vinegar
    1 tsp mustard
    1 tsp sugar
    6 tbsp sunflower oil
    1 None shallot, peeled and diced
    2 None clementines, peeled, pith and membranes between segments removed, juice collected
    11 oz mixed salad greens, cut into bite-sized pieces
    1 None apple, cored and sliced
    1/2 lb pork shoulder, cut into thin strips then threaded onto wooden skewers
    1/2 cup walnuts, roughly chopped and toasted
    None None crusty bread, to serve
Preparation
    For the salad, whisk together the vinegar, mustard and sugar. Season then gradually whisk in 4 tbsp oil. Stir in the shallot, clementine segments and any reserved juice. Toss with the lettuce and apple.
    To serve, heat the remaining oil in a frying pan and saute the pork skewers for 4 mins, turning. Arrange the salad on serving plates and top with the skewers. Sprinkle with the walnuts and serve with crusty bread.
