Triple Chocolate Surprise - cooking recipe

10 oz semi-sweet chocolate, 3 oz broken into pieces, 7 oz finely chopped
3 None eggs, at room temperature, separated
1/4 cup sugar
1 quart good-quality chocolate ice cream
12 oz milk chocolate, broken into pieces
1 1/2 cups heavy cream
1/3 cup unsweetened cocoa powder

Preheat the oven to 350\u00b0F. Grease a deep 9-inch square cake pan; line bottom and sides with parchment paper, extending paper 2 inches over sides.
Place broken semi-sweet chocolate and 2 tbsp water in small saucepan; stir on low heat until smooth. Cool until just warm.
Beat egg yolks and sugar in large bowl with electric mixer for 5 mins, or until pale and thick. Beat in melted chocolate mixture until combined.
Beat egg whites in medium bowl with electric mixer until soft peaks form. Fold into chocolate mixture, in 2 batches. Pour into prepared pan; smooth surface. Bake for 17 mins. Cool in pan on a wire rack.
Place ice cream in bowl; stir with wooden spoon until just softened. Spread over cake in pan; smooth surface. Cover with foil; freeze overnight.
Melt milk chocolate in heatproof bowl set over a saucepan of simmering water (don't let water touch bottom of bowl); stir until smooth. Remove from heat; cool until just warm.
Meanwhile, beat cream in large bowl with electric mixer until firm peaks form. Whisk slightly warm milk chocolate into cream. Pour over ice cream layer; smooth surface. Freeze overnight.
Combine finely chopped semi-sweet chocolate with sifted cocoa powder. Sprinkle over cake just before serving.
