Cilantro Fish Cakes - cooking recipe
Ingredients

1 lb boneless skinless white fish fillets, chopped
2 tbsp mango chutney
1 None lime, juiced
1 None egg white
1 None small red chili pepper, seeded
1 clove garlic, sliced
2 cups fresh breadcrumbs
1/4 cup firmly packed fresh cilantro leaves, plus additional, to garnish
4 None green onions, chopped
None None Oil, for shallow-frying
None None Salad, sweet chili sauce, to serve
Preparation

Place fish, chutney, lime juice, egg white, chili pepper and garlic in a food processor. Process until finely chopped.
Add breadcrumbs, cilantro and onions; process until combined and mixture comes together. Transfer to a bowl. Refrigerate for 10 mins.
Shape mixture into 8 flattened patties. Heat oil in a large skillet on medium heat. Cook patties, in batches, for 2-3 mins each side, until golden and cooked through. Drain on paper towel. Garnish with additional cilantro. Serve with salad and sweet chili sauce.
