Crossword Puzzle Cookies - cooking recipe

Ingredients
    1 1/3 cups butter, at room temperature
    2/3 cup brown sugar
    1 tsp vanilla extract
    1 None large egg yolk
    1/4 cup all-purpose flour
    1/2 cup powdered sugar
    None None Black and red gel icing
Preparation
    Using an electric mixer, beat butter, sugar and vanilla in a small bowl until light and creamy. Add egg yolk, beating until well combined. Stir in sifted flour. Mix with hands to form dough. Divide dough into 2 portions, flattening each to form a rectangle. Wrap in plastic wrap and chill for 30-40 mins or until firm.
    Preheat oven to 350\u00b0F. Line 2 large baking sheets with parchment paper. Roll dough between sheets of parchment paper to 1/8 inch thick. Using a small, sharp knife and a ruler, cut dough into 1 1/2 inch squares.
    Place squares on prepared sheets. Bake for 10-12 mins or until golden brown. Cool on sheets for 5 mins, then transfer to a wire rack to cool completely.
    Line a baking sheet with fresh parchment paper. Sift powdered sugar into a medium heatproof bowl and stir in 2 tbsp boiling water to make a runny icing. Dip cookies into icing, draining any excess. Place cookies on prepared baking sheet and set aside for 30 mins to set. Using writing icing, pipe letters on to cookies.
