Creamy Salmon Spread - cooking recipe
Ingredients

5 tbsp dry white wine
200 g salmon fillet, skinned and boned
1 tbsp olive oil
2 None carrots, peeled and grated
1 None lemon, juiced
100 g butter, softened
75 g double cream
1 pinch paprika
1 small bunch chives, chopped
Preparation

Bring the wine and 1/2 cup water to a boil in a saucepan. Add the salmon and simmer for 6-8 minutes then remove the fish from the saucepan. When cool, break it into pieces.
Heat the oil in a pan and saute the carrots for 2-3 minutes. Add 2 tbsp lemon juice, season with salt and pepper then remove from the pan and cool.
Beat the butter until creamy then stir in the cream. Stir in the salmon along with the carrot and 3/4 of the chives. Season to taste with lemon juice, salt, pepper and paprika. Serve with a sprinkling of the remaining chives and toasted bread
