Tuna And Tomato Rotini - cooking recipe
Ingredients

14 oz rotini pasta
7 oz grape or cherry tomatoes
2 tbsp balsamic vinegar
1 can (14 oz) diced tomatoes
2 cloves garlic, crushed
1/2-1 tsp red pepper flakes
1 tsp sugar
3 cans (5 oz each) tuna in oil, drained and flaked
1/4 cup chopped parsley
None None Crusty bread, to serve
Preparation

Preheat the oven to 400\u00b0F.
Cook pasta in a large saucepan of boiling, salted water according to package directions. Drain well.
Meanwhile, toss grape tomatoes and vinegar on a large baking pan. Season to taste. Bake for 6-7 mins, until tomatoes begin to burst.
Combine canned tomatoes, garlic, red pepper flakes and sugar in a medium saucepan on low heat. Cook, stirring, for 1 min.
Gently stir in tuna. Season to taste. Combine pasta, tuna mixture and roasted tomatoes in a large bowl. Sprinkle with parsley. Serve with crusty bread.
