Sausage And Vegetable Frittata - cooking recipe

Ingredients
    1 lb pork sausages
    3 tbsp vegetable oil
    1 lb baby new potatoes, sliced
    1 None red onion, peeled, sliced
    1 None green pepper, cored, seeded, sliced
    6 None eggs
    3 tbsp ketchup
    1/2 tsp cayenne powder
    2.5 oz Cheddar cheese, grated
    None None salad, to serve
Preparation
    Preheat broiler. Place sausages on a baking tray. Broil for 8-10 mins, until golden brown all over. Drain on paper towels then slice.
    Meanwhile, heat oil in a large frying pan. Add potatoes and cook for 8-10 mins, stirring occasionally, until golden. Add onion and pepper. Cook for 2 mins. Add sliced sausages. Beat eggs with ketchup and cayenne. Season then pour over vegetables. Reduce heat and cook for 6-8 mins, until almost set. Sprinkle with cheese then broil for 2-3 mins, until cheese melts and egg is set.
    Serve in wedges with salad.
