Chickpeas With Spinach And Balsamic Vinaigrette - cooking recipe

Ingredients
    1 tbsp olive oil
    1 cup sliced bell pepper
    1/4 cup diced red onion
    1 (15 oz) can chickpeas, rinsed and drained
    1 clove garlic, minced
    6 oz baby spinach
    1/4 cup balsamic vinaigrette
    1 tbsp fresh parsley leaves, chopped
    1/2 tbsp fresh thyme leaves, chopped
Preparation
    In large frying pan, heat olive oil over medium-high heat. Add peppers, onions and chickpeas. Cook, stirring occasionally, for 2 mins, or until peppers are tender. Add garlic, spinach, vinaigrette and herbs. Cook for 30 seconds, or until spinach is just wilted. Season.
