Ingredients

1 lb carrots, peeled and grated
1/2 cup desiccated coconut
2-3 tbsp lime juice
1/2 tsp sugar
1/2 tsp salt
1/3 cup salted roasted peanuts, crushed
2 tbsp vegetable oil
1 sprig curry leaves
1 None green chili, slit open
1/4 tsp cumin seeds
Preparation

Place carrots and coconut in a bowl. Stir in lime juice, sugar, salt and peanuts. Set aside.
Heat oil in a small frying pan over medium-high heat. Add curry leaves, chili and cumin. Cook briefly until fragrant then pour over carrot mixture and toss to combine. Serve.
