Swedish Turkey Meatballs With Lingonberry Jam And Mashed Potatoes - cooking recipe

Ingredients
    1 lb potatoes, peeled and chopped
    1 lb ground turkey
    1 None red onion, finely chopped
    1/4 cup lingonberry jam, plus additional, to serve
    2 tbsp chopped parsley
    1 tbsp tomato sauce
    1 cup dried breadcrumbs
    1 tbsp oil
    1/4 cup milk
    2 tbsp butter
    1/2 cup shredded Cheddar cheese
    None None Salad greens, to serve
Preparation
    Place potatoes in a large saucepan and cover with cold water. Bring to a boil and cook for 15-20 mins, until tender.
    Meanwhile, combine the ground turkey, onion, lingonberry jam, parsley and tomato sauce in a large bowl. Season to taste and mix well. Shape into 8 even-sized patties, then flatten slightly. Coat in breadcrumbs.
    Heat the oil in a large skillet on high heat. Cook the patties for 3-4 mins each side until cooked through. Remove from the pan and drain on paper towels. Keep warm in the oven at 250\u00b0F.
    Meanwhile, drain the potatoes thoroughly and return them to the pan. Mash well with milk and butter. Mix in the cheese and season to taste.
    Serve the patties with mashed potatoes, salad and additional jam.
