Mushroom Cheese Puffs - cooking recipe

6 tbsp (3/4 stick) butter, chopped
7 oz button mushrooms, quartered
1 clove garlic, crushed
1 cup flour
3 None eggs
1 3/4 cups grated Gruyere cheese
1/4 cup grated Parmesan cheese

Preheat the oven to 400\u00b0F. Line 2 large baking pans with parchment paper.
Melt 2 tbsp of the butter in a medium skillet on medium-high heat. Add mushrooms and cook, stirring, until browned and soft. Add garlic and cook, stirring, until fragrant. Drain.
Place remaining 4 tbsp butter and 3/4 cup water in a medium saucepan. Bring to a boil. Remove from heat. Add flour all at once; stir with a wooden spoon until combined. Return pan to medium heat. Stir until mixture starts to leave sides of pan (this will take about 3 mins).
Transfer the mixture to the bowl of an electric mixer. Add eggs, one at a time, beating well after each addition.
Stir in Gruyere cheese and mushrooms. Season with salt and pepper to taste. Drop heaping teaspoons of mixture onto prepared pans. Sprinkle with Parmesan cheese.
Bake for 10 mins. Reduce oven temperature to 350\u00b0F. Bake for 10 mins, or until puffed, browned and cooked through. Serve immediately.
