Sausage And Beer Muffins - cooking recipe

2 1/3 cups self-rising flour
1 cup beer
6 tbsp (3/4 cup) butter, melted
2 None eggs, beaten
1 cup sliced cooked smoked sausage
1/4 cup barbecue sauce
1/2 cup grated Cheddar cheese
Preparation

Preheat oven to 350\u00b0F. Lightly grease a 12-cup muffin pan.
Sift flour into a large bowl. Add beer, melted butter and eggs. Stir until just combined. Mix sausages with barbecue sauce in a small bowl. Fold sausage mixture and 1/4 cup of the cheese into batter.
Spoon mixture evenly into muffin cups, filling each 2/3 full. Sprinkle with remaining 1/4 cup cheese.
Bake for 20-25 mins, until golden. Cool in pan for 5 mins. Remove from pan; cool completely on a wire rack.
