Salmon Patties - cooking recipe
Ingredients

4 None potatoes, peeled and chopped
2 tbsp butter
1 cup fresh breadcrumbs
1 can (7 oz) red or pink salmon, drained and flaked
4 None green onions, thinly sliced
1 None lemon, peel grated and lemon juiced
1 None egg, lightly beaten
None None Few drops Tabasco sauce (optional)
1/3 cup flour, seasoned with salt and pepper
1/4 cup vegetable oil
None None Salad and lemon wedges, to serve
None None FOR THE DILL SAUCE
1/4 cup mayonnaise
1/4 cup plain yogurt
1 tbsp chopped dill
1 tbsp chopped capers
Preparation

Cook potatoes in a saucepan of boiling water for 15-20 mins, until tender. Drain well. Mash with butter in large bowl until almost smooth. Season to taste.
Add breadcrumbs, salmon, onion, lemon peel and juice, egg and Tabasco; mix well. Cool slightly.
Meanwhile, for the dill sauce, combine all ingredients in a small bowl. Season to taste.
Shape salmon mixture into 8 rectangular patties. Roll in flour, shaking off excess. Heat oil in a large skillet on high heat. Cook patties in 2 batches for 5-6 mins, turning once, until golden all over and heated through. Drain on paper towel.
Serve salmon patties with dill sauce, salad and lemon wedges.
