Potato Rösti With Fried Eggs - cooking recipe

Ingredients
    2 None large potatoes, peeled, grated, excess liquid squeezed out
    5 tbsp butter, melted
    1 tsp fresh thyme leaves
    2 tbsp olive oil
    3.5 oz baby spinach
    4 None eggs, fried, sunny side up
Preparation
    Combine grated potatoes, butter and thyme. Season. Shape into 4 patties.
    Heat olive oil in a large frying pan over medium heat. Cook patties, flattening slightly, for 4-5 mins per side, until golden brown. Drain on paper towels.
    Add spinach to pan. Saute for 30-60 seconds, until just wilted.
    Serve rostis with wilted spinach and fried eggs on top.
