Easy Chocolate Cake - cooking recipe

8 tbsp (1 stick) butter, at room temperature
1 cup sugar
1 tsp vanilla extract
2 None eggs
1 3/4 cups self-rising flour
3/4 cup unsweetened cocoa powder
8 oz milk chocolate, chopped
1/2 cup heavy cream

Preheat the oven to 350\u00b0F. Lightly grease and line a deep 12 x 8-inch baking pan with parchment paper.
Beat butter, sugar and vanilla in a large bowl with an electric mixer until creamy. Add eggs one at a time, beating well after each addition.
Sift flour and cocoa powder into a medium bowl. Fold into batter alternately with 3/4 cup water, until well combined. Pour into prepared pan.
Bake 35-40 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
For the ganache, place chocolate and cream in a small saucepan on low heat. Stir until smooth. Transfer to a bowl. Chill, covered, stirring occasionally, for 30 mins, until spreadable. Spread over cooled cake.
