Oatmeal Coconut Bars - cooking recipe
Ingredients

12 tbsp unsalted butter, chopped
1 cup light brown sugar
3 tbsp honey
1/2 tsp baking soda, mixed with 1/4 cup water
1/2 cup shredded coconut
2 cups rolled oats
1 cup all-purpose flour, sifted
2 cups powdered sugar

Preheat oven to 250\u00b0F. Grease and line a 13x9 inch jelly roll pan with parchment paper.
In a medium saucepan, combine 1/2 cup butter, brown sugar and 2 tbsp honey. Stir over low heat until sugar has dissolved. Remove from heat. Add baking soda mixture and stir to combine. Add coconut, oats and flour. Transfer to prepared pan and bake for 45 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 15 mins then transfer to a wire rack to cool completely.
Meanwhile, to make the honey icing, sift powdered sugar into a medium heatproof bowl. Add 2 tbsp hot water and remaining syrup and butter. Stir over a double boiler until spreadable. Spread over cake. Let stand at room temperature until set then cut into bars to serve.
