Ingredients

1 3/4 cups rolled oats
1 cup all-purpose flour, sifted + 2 tbsp
1 cup desiccated coconut
2/3 cup brown sugar
1/2 cup unsalted butter, chopped
1 tbsp honey
1 tsp baking soda
Preparation

Preheat oven to 300\u00b0F. Lightly grease and line 2 baking trays with parchment paper.
Combine oats, flour, coconut and sugar. Set aside.
Heat butter and honey over low heat for 2-3 mins, until melted. Whisk together 2 tbsp water and baking soda then mix into butter. Mix into dry ingredients until just combined. Roll mixture into balls (around 1 tbsp each). Arrange on prepared trays, 1 1/4 inches apart. Flatten gently.
Bake for 15-20 mins, for chewy cookies, or 20-25 mins, for crisper ones. Let cool on trays for 5 mins then transfer to a wire rack to cool completely.
