Mango Fool (Mango Whipped Cream) - cooking recipe
Ingredients

2 None ripe mangoes, peeled and cut away from pit
6 tbsp sugar
2 tbsp white rum
1 None lime, juice and zest
2 cups double cream
Preparation

Cut some of the mango flesh into slices and set aside for decoration. Chop up the rest of the flesh and puree in a blender until smooth. Stir in the sugar, rum and lime juice.
Pour the cream into a large bowl and whip to soft peaks. Fold in the mango puree and transfer to a serving bowl. Decorate with the reserved mango slices and lime zest.
