Sirloin Steak With Eggplant, Couscous And Cumin Yogurt - cooking recipe

Ingredients
    1 None lemon, juiced
    1 tsp ground cumin
    1/4 tsp allspice
    1 lb sirloin steak, trimmed
    6.5 oz couscous
    1/4 cup fresh mint leaves, chopped
    1/3 cup fresh parsley, chopped
    2 None spring onions, thinly sliced
    2 tsp lemon zest
    1 None small eggplant, sliced
    None None Cumin Yogurt
    1/2 cup low-fat plain yogurt
    1/2 tsp ground cumin
    1 clove garlic, minced
    1/4 cup fresh mint, chopped
Preparation
    Combine 1 tbsp lemon juice and spices. Coat steak then set aside for 15 mins to marinate.
    Combine couscous with 1 cup boiling water. Cover and set aside for 5 mins, until liquid is absorbed. Fluff with a fork. Toss with herbs, onions, lemon zest and remaining lemon juice. Season to taste.
    Preheat grill. Lightly coat eggplant with oil. Grill for 2-3 mins per side, until tender. Cook steak for 3-4 mins per side, until cooked to your liking. Let rest, covered, for 5 mins.
    To make the cumin yogurt, combine all ingredients. Season to taste.
    Slice steak and serve on a bed of couscous with eggplant and cumin yogurt.
