Chicken Skewers With Peanut Dipping Sauce - cooking recipe

6 None chicken thighs, fat trimmed
1/4 cup oyster sauce
2 tbsp sweet chili sauce
2 tbsp Chinese rice wine
2 tbsp grated ginger
1 lb cooked rice (from 1 cup raw)
1 None mini cucumber, cut into ribbons
None None lime wedges, to serve
None None Peanut Dipping Sauce
1/4 cup lime juice
2/3 cup roasted peanuts, chopped
3 tbsp chopped cilantro
1 tsp fish sauce
Preparation

Cut each chicken thigh lengthwise into 3 pieces. Mix the chicken with the oyster and sweet chili sauces, wine and ginger and chill for 30 mins to marinate.
Meanwhile, to make the peanut dipping sauce, combine all ingredients in a small serving bowl. Set aside.
Preheat a grill pan or grill on high.
Thread the chicken onto skewers and cook for 3 mins each side, until golden and cooked through.
Serve with rice, cucumber, peanut dipping sauce and lime wedges.
