Chocolate Orange Sticks - cooking recipe

2 large thick-skinned oranges
1 cup sugar
7 oz semi-sweet chocolate, melted

Cut oranges into quarters. Peel away skin, leaving pith attached to skin. Cut skin with pith into 1/2 inch-thick strips. Reserve fruit for another use.
Drop orange strips into pan of boiling water. Return to the boil; drain. Repeat twice.
Combine sugar and 1 cup water in medium saucepan. Stir on medium heat, without boiling, until sugar dissolves. Add orange strips; bring to a boil. Reduce heat to low; simmer, uncovered, stirring occasionally, about 5 mins or until strips become translucent.
Meanwhile, place wire rack over parchment paper-lined tray.
Remove strips from syrup with tongs; place on wire rack in single layer. Dry, uncovered, overnight.
Line a tray with parchment paper. Using dipping forks, dip strips, one at a time, into chocolate; place on tray. Let stand at room temperature until chocolate is set.
