Fava Bean, Lentil And Chorizo Salad - cooking recipe

Ingredients
    1/4 cup green lentils, rinsed, drained
    1 None onion
    1 None bay leaf
    1 lb frozen fava beans
    1 None chorizo, thinly sliced
    1/4 cup red wine vinegar
    2 tbsp olive oil
    1 tbsp Dijon mustard
    1 None shallot, finely chopped
    1/4 cup parsley, coarsely chopped
Preparation
    Cook lentils and onion with bay leaf in a large saucepan of boiling water for 30 minutes, until tender. Drain and discard onion and bay leaf. Keep warm.
    Meanwhile, cook fava beans in a saucepan of boiling, salted water for 2 minutes. Drain. Cool in ice-cold water. Drain again. Remove and discard skins.
    Heat a large non-stick frying pan on high. Cook chorizo for 5 minutes, until crisp. Drain on paper towel.
    To make dressing, combine vinegar, oil, mustard and shallot in a bowl. Season.
    Combine lentils, fava beans, chorizo and parsley in a bowl. Toss with dressing and serve.
