Breakfast Fry Up - cooking recipe

Ingredients
    2 small tomatoes, quartered
    4 tsp balsamic vinegar
    5 oz mushrooms, thickly sliced
    4 oz baby spinach leaves
    2 tbsp coarsely chopped fresh basil
    4 slices rye bread, toasted
Preparation
    Preheat the oven to 425\u00b0F.
    Place the tomato in a small shallow baking dish. Drizzle with 2 tsp of the vinegar. Roast, uncovered, for about 10 mins.
    Cook the mushrooms, spinach and remaining 2 tsp vinegar in a large skillet on medium heat, until the mushroom is tender and the spinach wilts. Stir in the basil.
    Serve the tomato and mushroom mixture on toast.
