Greek Piroshki Pies - cooking recipe

Ingredients
    2 3/4 cups all-purpose flour
    3 None eggs, beaten
    1/3 cup olive oil
    7 oz Greek feta cheese, finely crumbled
    3.5 oz Greek sheep's milk cheese, grated
    2 tsp fresh mint leaves, finely chopped
    2 tsp fresh dill, finely chopped
    None None oil, for shallow-frying
Preparation
    In a food processor, combine flour, 1 egg, 1/2 cup water, olive oil and 1 tsp salt and process until ingredients just come together. Turn out onto a lightly floured work surface and knead until smooth. Cover in plastic wrap and chill for 30 mins.
    Meanwhile, to make filling, combine cheese, remaining eggs and herbs.
    Roll out dough until 1/8 inch thick and cut out 30 - 3 inch discs. Re-roll dough if necessary.
    Place 2 tsp filling in the center of each disc. Brush edges with water and fold pastry over to form semi-circles. Press together edges with a fork to seal. Shallow-fry in oil until browned on both sides. Drain on paper towels.
