Shrimp And Pork Dumpling Soup - cooking recipe

Ingredients
    4 oz raw shrimp, peeled, deveined, finely chopped
    4 oz ground pork
    4 None green onions, finely sliced
    2 tsp soy sauce
    1/2 tsp grated fresh root ginger
    24 None square wonton wrappers
    None None FOR THE BROTH
    4 cups chicken stock
    1 tbsp soy sauce
    1 (1 inch) piece fresh root ginger, peeled, cut into thin julienne
    5 oz fresh shiitake mushrooms, thinly sliced
Preparation
    Combine shrimp, ground pork, green onions, soy sauce and ginger in a bowl. Place 1 tsp mixture into center of each wrapper.
    Wet edges with a little water. Fold diagonally to form a triangle, pressing moistened edges together and using thumbs to press down on pastry around filling to secure and center it. Bring 2 points of long edge together, folding 1 point over other to overlap, and press to seal. As each dumpling is shaped, place on a tray lined with baking paper.
    To make broth, place stock, soy sauce, ginger and 2 cups water in a large saucepan and bring to a boil. Reduce heat to low. Add mushrooms and dumplings and simmer gently for 3-4 mins, until dumplings float.
